Beautiful San Diego sets the backdrop for an intensive 2-day hands-on Certified Tea Blending Course at the Courtyard by Marriott Liberty Station in San Diego, California, January 19 – 20, 2012. The course will be led by Certified Tea Master Diego Morlachetti, Executive Director of the Escuela Argentina de Té in Rosario, Argentina, a licensee of the American Tea Masters Association. It will be followed by 3-months of intensive home study involving various blending formulations and periodic online sessions for support. The course will focus on the hidden secrets and mysteries of tea blending and professional techniques for developing both traditional blends and signature formulas.
With blended teas the first choice among many tea drinkers today, registrants will be trained in blending various types and grades of tea with other teas and with ingredients like herbs, dried fruit, flowers, flower petals, and spices, including Ayurvedic formulations. They will learn to create professional blends, based on traditional formulas and current market demand, achieving results based on the technical criteria acquired during the course. They will also learn to determine the freshness of the ingredients they are using in the mixing and blending phases to assure a natural and satisfying taste.

The 2nd China Xiamen International Tea Fair, scheduled for October 20 – 23, 2011, is the tea industry’s foremost international trade show. It will be held at the Xiamen International Conference and Exhibition Center in Fujian Province, and features 22,000 square meters of exhibit space accommodating 1,000 booths. More than 50,000 trade visitors are anticipated to attend.
Last year’s Tea Fair was a huge success with 221 companies exhibiting, 78 of which were from overseas, including: Hong Kong, Taiwan, Korea, United Kingdom, Sri Lanka, India, and others. The total number of trade visitors reached 43,656.
The 2nd China Xiamen International Tea Fair takes place at the pristine, modern Xiamen International Conference & Exhibition Center. Exhibitors from leading companies in the United States, Canada, China, Japan, Taiwan, India, England, Sri Lanka, Kenya, Korea, South Africa, Vietnam, and Malaysia will display their latest products and innovative services. Is it tea or juice? Either way, everyone agrees that Master Handa's juicy matcha recipe is delicious! He shared this recipe with attendees at the Matcha Seminar in San Francisco this past month, and now we want to share it with everyone else:
1/2 to 1 teaspoon of DōMatcha
6 ounces of water
6 ounces of juice, preferably a thick all-fruit drink such as Odwalla fruit smoothies
Mix the matcha and water together thoroughly. Pour juice in a separate glass, and add add matcha mix on top to form a lovely two-layered effect. You can also mix the matcha directly into the juice for a refreshing drink any time of day!
Matcha Green Tea Latte Recipe
For one 12oz to 16oz serving: Blend 1-2 teaspoons of DōMatcha and a small amount of liquid with a spoon to make a smooth paste. You can use hot or cold milk as well as vanilla soy, rice or almond milk. Add more liquid and sweeten as desired. Try adding chai spices, vanilla or white chocolate syrups for delicious variations!
Matcha Green Tea Frappe Recipe
For one 12oz to 16oz serving: Mix 1-2 teaspoons of DōMatcha with cold milk or vanilla soy/rice/almond milk and some ice cubes in a blender. Add sweetener, fruit or a sprinkle of cinnamon as desired. So easy and so good!

Phone Developer Sam Iglesias (@siglesias) and UI designer Mac Tyler (@mactyler) announced today that Tea for iPhone (@teaapp) has been released in Appleʼs iTunes App Store. Tea for iPhone is a new iOS application that gives tea drinkers a convenient way to store their tasting notes and brew settings, with simple one-tap sharing for Facebook and Twitter. Tea also has a built in timer that remembers settings for all inputted teas as well as an Inventory Tracker that automatically calculates how many brews are remaining of each tea. Tea also recognizes over 700 tea names and 15 tea types to provide temperature and steep time suggestions.
“The idea for Tea came a while back when I was struggling to brew a good cup of Gyokuro,” Iglesias said. “I wanted a simple way to keep track of my various brew settings and ratings so that I could hone in on the perfect cup. We didnʼt think any of the App Storeʼs current tea apps fit the bill, so we created our own. Our pre-release response has been breathtaking, and we canʼt wait to get Tea in the hands of thousands of tea drinkers around the world.”

Not only will participants taste and evaluate a superior-grade of tea each month, but they will have the opportunity to share their experience with others using the association's new online audio-visual system.
The tea samples will be delivered each month by San Francisco's world-famous Imperial Tea Court, which selects teas deemed as the most remarkable among the season's new arrivals. It is all part of its Tea of the Month Club. Each shipment will include 2-4 ounces of tea, along with information about that particular tea and brewing recommendations.
Roy Fong is the founder of Imperial Tea Court, the first traditional Chinese teahouse in America. Mr. Fong is regarded as one of the world's top authorities on Chinese and Taiwanese teas. Each year he visits selected tea gardens to supervise all aspects of production: from planting and cultivation to harvesting, processing, and grading.

Tea Master's Association Survey

The Value of Training to Become a Certified Tea Master

The American Tea Masters Association surveyed several of the Certified Tea Masters who completed its Tea Mastery Certification Course. The course is required for obtaining the prestigious Certified Tea Master™ designation. The purpose of the survey was to determine the value of the training program offered by the association.
Program graduates were asked three questions:
1. What are the most significant benefits you received by completing the Tea Mastery Certification Course?
2. How has the Certified Tea Master designation helped you?
3. How have these benefits affected your tea business or plans to start one?
The results of the survey were universal, inspirational, and empowering. The complete report containing all of the respondents’ answers is on the association’s web site. The association wishes to publicly thank each of the Certified Tea Masters who responded to the survey.
