When I began exploring tea and tea culture about seven years ago the only thing I knew about matcha was that it was a powdered Japanese green tea used mainly in the Japanese tea ceremony. While it may have had other uses in Japan and elsewhere, here in the U.S., as far as I was aware, it was still quite obscure.

You don’t have to look too hard to find a silly news headline these days. One of my favorite tea-related ones in recent weeks comes from the British press. It’s the one that claims that Yorkshire Tea Saved My Lamb’s Life. While I thought I’d heard of many, if not most, of the alleged health benefits for tea, somehow this one got by me. Apparently, said sheep had eaten poisonous rhododendron leaves but was saved by her quick-thinking owner, who proceeded to brew a very strong cup (8 bags per cup) of Yorkshire tea every two hours for two days. And that’s how it’s done.

If pressed to choose a favorite type of tea, I wouldn’t have a problem. I’d go with any one of a number of single-estate black varieties from Assam, a state in northeastern India. Though it’s important to note that much of the tea grown in Assam, the world’s single largest growing region, is not necessarily of exceptional quality.

If you know anything about Alex Zorach you probably know that he's the tea guy behind RateTea, one of a number of great resources featured in our listing of Tea Review Sites. Alex also holds forth on tea-related topics at the appropriately named Alex Zorach's Tea Blog, where he writes about "tea, business, sustainability, herbs, culture, ecology, and more." As I mentioned to my esteemed editor when I proposed this article, some of the worst teas I’ve ever tasted were sencha. On the other hand, some of the best teas I’ve ever had the pleasure to sample were sencha. Which is something that could probably be said about many varieties of tea – Assam is one that immediately springs to mind. There’s a wide range of quality even within some of the most narrow categories of tea, but for some reason sencha is the one that stands out for me.

Since 1994 TEA Magazine has been a lifestyle publication that celebrates tea and tea culture, showcasing tea establishments, informing readers of science-based health advances, and introducing tea drinkers to those who grow and craft tea in exotic places.

Now in its 18th year, TEA Magazine has undergone a beautiful transformation in both content and design as it was acquired by ITEM Media in January from The Olde English Tea Company. ITEM Media celebrated the re-launch of TEA Magazine at the 2012 World Tea Expo in Las Vegas (June 1-3, 2012) by inviting all tea professionals in attendance to a cheerful toast.

Enthusiasm and high energy permeated the cocktail party as individuals streamed in representing companies based in Nepal, India, China, Sri Lanka, Africa, Japan, Taiwan and the Azores. Among the who’s who were two of the oldest family-owned tea companies, which were represented by Hartley Johnson of Mark T. Wendell Teas and Cyndi and Jim Harron of Simpson & Vail.

Additional attendees included Janice Duis of Jamba Juice; Shane Talbott and Steve Nakisher of Talbot Teas; Rajiv Lochan of Lochan Teas; Dan Robertson of World Tea Tours; Photographer Matthew London, who is completing a new book of photos entitled “The Spirit of Tea”; members of the International Tea Cuppers Club; and the new Tea Master for the Boston Tea Party Ships & Museum, Bruce Richardson.

In addition to several authors and tea educators, such as James Norwood Pratt, Jane Pettigrew, and Lisa Boalt Richardson, the TEA Magazine staff joined the excitement, including Graham Kilshaw, Editor/Publisher Dan Bolton, Advertising Director Ed Avis, Designer Bryan Clapper, Founding Editor Pearl Dexter, and Contributing Editor Katrina Ávila Munichiello.

It’s not for nothing that one of these pioneers, Robert Fortune, has been likened to an “Indiana Jones of tea,” a result of some of the wild and wooly situations he sometimes found himself in.

Rooibos is not for everyone (as the esteemed editor of this fine publication will confirm) but this herbal beverage that’s produced solely in South Africa is beloved by increasing numbers of consumers and has been much in the news lately. Rooibos is also known as redbush, for the deep reddish color of its fine leaves and the resulting liquid. It’s reputed to have a wide range of health benefits, though many of these have yet to be confirmed by actual research.

How long have you been in business?
The website went live in March 2011 (we’re online only).

What is the size/scope of your business?
We ship globally to matcha enthusiasts in many countries, and provide matcha to some of the best restaurants in the world, including The French Laundry and Manresa. Our matcha is also served at the White House.

Why tea?
I’ve been a matcha aficionado since the 1980s, when I first began living in Japan. There’s plenty of cooking matcha to be found on the internets, but I wasn’t able to find any artisanal matcha that tastes amazing just straight up, as tea, and not as a cooking ingredient. So I set out to find it, mostly because I just wanted to have a steady supply (it’s somewhat addicting once you discover it). But when I served it to friends, everyone wanted some, and voila, the business was born.

Tea — India’s National Drink?

It seems like a natural assumption that people who live in countries that grow a lot of tea drink more of it than those in other countries. But it’s not always true. The Chinese, who grow more tea than any other nation, are ranked 33rd on the list of tea consumption on a per capita basis. As for India, the world’s second largest tea growing country, they rank 53rd on the list, drinking an average of just over a pound of tea per person per year. For some perspective on the matter, consider that the world’s top tea drinkers, in the United Arab Emirates, average nearly fourteen pounds of tea a year.
